Macarons require only a few ingredients, but their quality makes a big difference. Below, I've highlighted two ingredients that have the greatest impact on your macarons.
Almond Flour
  • Extra-Fine Texture
Choose finely ground almond flour with a soft, powdery consistency. Coarse almond flour can result in bumpy, uneven macaron shells.
  • Blanched Almonds
Look for almond flour made from blanched almonds, with the skins removed. It should have a light, creamy colour rather than a brown or speckled appearance.
  • Fresh & Dry
Good almond flour should feel loose and dry, not greasy or clumpy. Avoid flour that feels oily or has a stale smell.
Chocolate
  • Good-Quality Chocolate
Choose chocolate made with cocoa butter rather than vegetable fats. A simple rule: if you enjoy eating it, you'll enjoy it in your macarons! This applies to both white and milk chocolate.
  • White Chocolate
Look for creamy white chocolate with a balanced sweetness. I recommend Cacao Barry Zéphyr, but good-quality supermarket chocolate, such as Lindt, works well too.
  • Milk Chocolate
Choose milk chocolate with a rich cocoa flavour and a smooth, creamy texture. I personally use Callebaut Milk Chocolate, but Lindt is also a good alternative.
